I love the amazing wonders and versatility of SOUP! And my Pumpkin Beauty Soup Recipe is just another way to work on being mindful, as we eat one spoonful at a time.

Soup is an amazing food that is energizing, great for weight loss and easy to digest. I’m a huge soup fan, and I wanted to offer you another great recipe to have in your soup repertoire, that is perfect for this season!

Now, let’s talk about our ingredients today…

Beauty Food : Pumpkin

Pumpkin contains antioxidants vitamin A and C—that will help to soften and soothe the skin and boost collagen production—keeping your skin fresh and looking your best.

Pumpkin really is a solid source of essential nutrients and should be added to our beauty foods rotation. And remember, if you’re in a bind and unable to prepare fresh pumpkin, organic pumpkin puree in cartons is an option (versus aluminum cans!).

In the Beauty Detox Solution, I emphasize consuming more whole plant foods, that are nutrient-dense and alkalizing, and pumpkin is a great one to rotate in!

Give your body the boost it needs by clicking here!

When should soup be eaten?

Since soup has a lot of liquid, I recommend having it first for best digestion.

For more info, check out my blogs, “How To Eat Soup” and “The Easiest Weight Loss/Maintenance Tip Ever” for more info on why this is so important.

To sum it up, consuming liquids and water with your meals dilutes the hydrochloric acid in ours stomach (and other digestive juices), which means that our food doesn’t digest as easily. We want to enhance digestion for increased energy, less bloating and all around better nutrient assimilation!

So do your best when implementing these new health tips into your daily lives, and remember, “Progress, not perfection”.

My Definition of Beauty

If there is one thing you take away from this, it’s that I’m redefining beauty to be an empowering, attainable concept for all women and people.

Beauty is not about the typical shallow concept that is often circulated. If you’ve had the chance to look into my Radical Beauty book, you will have noticed that it has nothing to do with trendy makeup, fads, insecurities, or comparing ourselves with other women.

Instead of being shallow or limited to external body parts, Radical Beauty goes deep below the surface.

Try to remember that your uniqueness makes it unnecessary to compare yourself with anyone else. There is no space for comparison or competition. It’s truly about taking care of your own insides to help you feel your best and ultimately make you express your highest beauty on the outside- towards your own unique self.

By adding more Beauty Detox Foods into your daily lifestyles, you will be applying the Internal Nourishment Pillar (which is Pillar 1 in my Radical Beauty book), optimizing digestion and creating nutritional balance. The benefits are endless, from clearer, smoother, and more radiant complexion, to a flatter midsection and healthier, more lustrous hair!

Let’s claim our beauty and check out these easy steps for this delicious and nutritious soup!

In the blog and that instruction you say to use olive oil but in the ingredients list it calls for coconut oil. I know you typically say not to use olive oil so I think it’s probably just a typo for you guys. Just wanted to let you know :-)

    Hi Kimberly,

I have been follow you for almost three years and I am wondering is it possible to cook olive oil in medium high heat? Olive oil is not the oil for high heated and your recipe require heat for 3 to 5 mins. I look forward to hearing from you. Thank you!

Hi Kimberly. This looks great. Does it call for the thinner coconut milk that comes in tall cardboard cartons? Or is it the more concentrated kind that has a cream texture on top and often comes in cans? xoxo, Sarah

Is the coconut milk supposed to curdle when adding to the heated ingredients?

Hi CI, and thanks for your great question. Yes, coconut milk does tend to curdle when it hits the heat, and this is because the protein changes its shape and ability to react with water and/or oil. You just need to give the coconut milk a good stir and it will blend the curds back again. Thanks for giving this recipe a try and let us know what you think. Lots of love! ;)
