I grate the eggs with a box grater instead. Easier, less time-consuming, still turns out great.

Lovely dish. Definitely dinner party worthy! Used purple asparagus from the farmers market (I know, it turns green when cooked) and added Banyuls red wine vinegar instead. Simply minced the eggs (but the whites and yolks separately due to the different textures) because was already chopping up the capers. A touch of dried ground Aleppo pepper instead of ground pepper gave it a touch of color, flavor, and a little spiciness.

This was very good. Nice light spring salad. I don't get the need to separate the eggs before chopping them since they are all getting mixed together. Aesthetics maybe?

I didn't have capers because I forgot to buy some, so I just omitted it. It was absolutely delicious. My husband loved it and so did I. I will do this again, simple but yet amazing.

If I were making this for vegans I'd add chopped chickpeas or grate some button mushrooms or super-firm tofu (squeeze out some of the water) and toss it with a bit of the dressing and whatever herb I was using.

Made this for Easter dinner and it was a hit! I had no chives so used a tablespoon of minced shallots. The shallots were placed in the vinegar for about 10 minutes before adding the oil. Then used parsley and tarragon as the herbs. This goes on the regular list for using asparagus.

Easy & yummy. I used red wine vinegar (& added a little sugar to get the sherry vinegar taste). This will be my go to recipe whenever I get an order of fat fresh asparagus from my CSA in the spring.

I used Meyer lemon vinegar for the dressing, then added chopped hazelnuts and goat cheese. Actually skipped the herbs because I forgot them and don't like capers. Topped with walnut oil croutons and it was amazing.

Made this for lunch and it was tasty! Used the box grater for the eggs and added a sliced hard boiled egg to my portion for more protein (and to use up Easter eggs!). Next time I would add something with a little crunch—maybe toasted sunflower seeds?

I stopped leaving asparagus in a steam bath years ago. Inconsistent results, Rather than "steam" for 5 minutes or whatever, bring water to a boil in a covered pan, throw in the asparagus and, on the second boil, shut off the heat and let it sit while you get the rest of the dinner on the table (if you need a test, pick up a stalk in the middle and, if it bends about an inch down on the ends, serve it), It comes out cooked but firm and still looking fresh.

I roasted the asparagus (olive oil, salt, and pepper), used only dill, and used lemon juice and white balsamic vinegar. Chopped the egg whites but just crumbled the yolks. Speedy dish with rave reviews. We especially liked the dill.

Delicious, fresh, pretty salad and couldn’t be much easier! Don’t need all the dressing. I doubled it and used only half the dressing and it was still alittle too much dressing. I would prob add a fresh herb next time. Could be mint? Or thyme? Not sure. I think fresh shallots marinated in the dressing would be a nice addition. Still 5 stars just as the recipe is.

Very good. Nice to have a mainly made ahead recipe for our Easter dinner. Used sherry vinegar and herb was parsley. Chopped egg whites and crumbled egg yolks. Even my son who does not like hard boiled eggs loved it.
